Grits Grillades!

So last night we made homemade grits from scratch.  Time to cook them!  You cook them just like you cook ordinary grits - with butter, water, and salt on the stovetop.

Pretty soon here's what you have - some really nice grits.  Grits is just a good, southern, down-home comfort food!

But you know what?  Special grits call for special accompaniments.  We're going to make Grits Grillades. Grillades is pronounced gree-ODDS and means 'thin grilled meat.'  It is so delicious.  Here is the recipe:

4 lbs beef sirloin tip 
1/2 cup butter
1/2 cup flour
1 cup onions
2 cups green onions
3/4 cups celery
1 1/2 cup peppers
2 cloves garlic
2 cups chopped tomatoes
1/2 teaspoon tarragon
2/3 teaspoon thyme
1 cup water
1 cup red wine
2 teaspoons salt
1/2 teaspoon black pepper
2 bay leaves
1/2 teaspoon Tabasco Sauce
2 tablespoons Worcestershire Sauce
3 tablespoons chopped parsley

Take your meat and cut into serving sized pieces, pound to 1/4 inch thick and brown in 1/4 cup oil and remove.

Make a roux.  Add 1/4 cup oil to pot and flour and stir until dark brown.

Add onions, green onions, celery, peppers, and garlic and let it cook down and then add tomatoes, tarragon, and thyme and cook for 3 minutes.

Add water and wine.  Then you return the meat and add the next 5 ingredients. Simmer for 2 hours and add parsley.

Serve over grits!
