About 25 years ago I met the woman who would become my wife. I can still remember the first meal she cooked for me - omelets! That lady could cook a mean omelet. She still can. I think she makes them even better now. Of course the ingredients she's using now are better and she's had a few years to hone and perfect her craft of omelet making.
She cuts up a medley of fresh tomatoes, onions, peppers, garlic, and cilantro and sautes it in an enameled cast iron pot. She would ordinarily slice some nice mushrooms in there as well, but unfortunately, the 'shrooms in the fridge had gone bad.

Then she'll spoon some of those fresh garden veggies onto one half of the egg in the skillet...

Then Tricia adds some grated cheese that Daisy and Rosie contributed to the breakfast..

Finally, she flips over half of the omelet over to allow the cheese to melt.

Finally, she adds a bit of cilantro on top for garnish and flavor and calls me and tells me it's time to eat!

And she's been calling me to eat her wonderful cooking for what'll be 24 years in October. And it all started with an omelet...
