Homemade Fettucine Alfredo

We had never made homemade noodles before.  It is easier to open a box of pasta, but it is neat to try something new.  Tricia found some whole grain spelt flour and decided she'd try making homemade spelt noodles.

Spelt has gluten but is not the modern wheat.  It is an ancient species of it.  It is a different grain and it breaks down easier and is able to be digested easier than the normal wheat in the American diet.  She took 2 cups flour and added a 1/2 teaspoon salt and mixed.

To this add 3 eggs, 1 Tablespoon water, and 1 Tablespoon coconut oil.

Mix until blended.

Separate the dough into thirds and make 3 balls out of it.

Roll out each portion into thin rectangles, making sure to dust with flour on both sides or it will stick.

Slice the dough into 1/4 inch slices with a sharp knife.  They have machines that will cut them all nice and uniform, but they'll eat just fine like this.

All of the noodles are now cut.  In fact, we have 'oodles of noodles.'

Bring salted water to a boil and drop noodles in.  Cook 8 -10 minutes until done.

Make a little Alfredo sauce to top off the noodles with by mixing butter, garlic, heavy cream, salt, pepper and Parmesan cheese.  We added a little cooked chicken as well, and accompanied the dish with fresh green beans and yellow and zucchini squash medley.

The dish was a big hit.  There weren't many leftovers at all.  Making noodles wasn't hard at all, but, of course, we didn't try to make bowtie pasta!
